  1. Pineapple Ginger Mojito

    Ingredients

    • 2 ounces ginger liqueur such as Domaine de Canton

    • 2 ounces pineapple juice

    • 1/2 ounce white rum

    • splash of club soda

    • fresh mint and pineapple for garnishing

    Instructions

    1. Muddle fresh mint and pineapple wedge in a tall glass. Add in ginger liqueur, pineapple juice and white rum.

    2. Add ice, club soda, and stir to combine.

    3. Garnish with pineapple wedge and fresh mint.

  2. EASY WHITE WINE SANGRIA

    Ingredients

    • 2 cups Strawberries sliced

    • 1 Orange sliced

    • 1 cup Basil loosely packed

    • 2 Lime sliced

    • 1 Bottle Chardonnay White Wine

    • ½ cup Tequila / Vodka / Brandy

    • 3 cups Sparkling Water / Soda

    Instructions

    1. Leave the peels on while slicing the oranges and lime. Add the fruits, lime and basil to a pitcher.

    2. Pour tequila and wine over the fruits and give it a stir.

    3. Refrigerate for at least 3-4 hours or preferably overnight. The taste will intensify and get better as it sits in the fridge. When you are ready to serve, pour in the sparkling water or soda. Serve immediately.

  1. Green Chile Guacamole

    Ingredients

    • 3 ripe avocados, pit and skin removed

    • 4 ounces diced green chiles

    • 1 teaspoon ground cumin

    • 1/4 teaspoon garlic powder

    • Kosher salt and fresh ground black pepper to taste

    • 1/4 cup finely chopped red onion

    • 1/2 of a jalapeño, deseeded and finely chopped

    • 1/4 cup cilantro leaves, chopped

    • 3 tablespoons fresh lime juice

    Instructions

    1. In a medium sized bowl mash the avocados until your desired consistency is reached.

    2. Stir in the cumin, garlic powder, salt and pepper.

    3. Add in the green chiles, red onion, jalapeño, cilantro and lime juice. Stir everything together until combined and taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.

  2. CAPRESE SKEWERS

    Ingredients

    • 1 pint cherry tomatoes

    • 3/4 ounce fresh basil

    • 4 ounces ciliegine (cherry-sized) mozzarella

    • 1 tablespoon pesto, optional

    • 1 to 3 teaspoons olive oil, optional

    • Flaky salt and freshly ground black pepper

    Instructions

    1. Wash and dry the tomatoes.

    2. Fold a large basil leaf around the tomato, then spear on a 4-inch-long skewer or toothpick.

    3. Add a mozzarella ball to the toothpick. Repeat.

    4. If desired, whisk the pesto with enough olive oil to form a thin sauce, and drizzle over the skewers.

    5. Sprinkle a little salt and pepper over them.
